mushrooms stuffed with herbs and goat cheese

I had a friend coming over for lunch and wanted to make something simple but special and delicious.  What better to serve than something cheesy and stuffed so here are some stuffed mushrooms.
Start out with a small casserole dish then drizzle a little oil down and place right on top of the oil 6 large white mushrooms with the stems out and washed well.
Put a little salt, pepper, fresh thyme and fresh tarragon in the cavity.
Add goat cheese and a small pat of butter on top of the herbs.
Pack on some panko breadcrumbs and drizzle a bit of olive oil on each one.  I like to drizzle individually rather than just a drizzle over the whole pan because each mushroom deserves its own attention.
Bake in a 425 degree oven for about 20 to 30 minutes.  Here is your finished product.  Just finish with a little more goat cheese and fresh parsley.
